1. Bring water to a boil in a pot. Carefully add bubbles to the boiling water, stirring gently to prevent them from sticking. Increase the heat to MEDIUM HIGH and cook uncovered for 35 minutes, stirring occasionally.
2. While the bubbles are cooking, prepare tea according to the instructions provided in STEP 2.
3. After 35 minutes, turn off the heat and remove the pot from the stove. Pour out half of the boba water and stir in sugar until it dissolves. Cover the pot with a lid and let it sit for an additional 25 minutes.
4. Once the time is up, carefully drain out the excess water, being cautious as it will still be hot. Leave about a cup of boba water in the pot to prevent sticking. Stir in a couple of ice cubes until the boba reaches room temperature.
5. For the best texture and flavor, consume the cooked boba (tapioca pearls) within 2 hours.
6. Store any leftover uncooked boba in a sealed or airtight container in a cool, dry area. Do not refrigerate. Once opened, uncooked boba will last approximately 2 weeks. Once cooked, the boba will only remain good for about 4-6 hours. Avoid refrigeration.
